Chucking together two of the most generic 'foodie instagrammer' foods to make this totally basic - but totally delicious - recipe. Technical difficulty a solid 2/10 so even if cooking isn't your jam you'll have a hard job messing this one up. One caveat is that you do need a decent food processor or high speed blender. If using a blender, stop it intermittently to scrape down the sides and make sure you get a nice smooth finish. Eat with crudités, flatbread, crackers, a spoon, your hands....
What you need:
- 2 x 400g tins chickpeas, drained
- 1 avocado
- 1 clove garlic
- 1 tbsp tahini
- Juice of half a lemon
- 1 handful parsley
- A good drizzle of olive oil
Instructions:
1️⃣ Place the chickpeas, avocado, parsley and garlic into the bowl of a food processor (you can use a high-speed blender but you'll have to stop it to scrape down the sides!). Turn it on and blitz until roughly combined
2️⃣ Now add the tahini, lemon juice, drizzle of olive oil, as well as a good pinch of sea salt and some pepper. Turn the processor back on and blend until suuuuper smooth. Be patient, and give it a good 3 minutes of processing time. If the mixture is thicker than you'd like, add a little water a bit at a time until you reach your desired consistency
3️⃣ Serve immediately, or store in the fridge until 30 mins before serving time. This one is better served at room temp than fridge-cold
